Madeleines

For few years now, America has discovered the Madeleine, this small sponge cake with its distinctive shell shape.

Originally born in Commercy and Liverdun, two communes of the Lorraine region in northeastern France, Madeleine may have been named for a 19th century pastry cook, Madeleine Paulmier. Symbol of the French culinary heritage, Madeleines are, most of the time, unfortunately, not expressing the right recipe and vision of the original.

Madmac decided in 2006 to reveal the authentic taste and recipe of the Madeleine de Commercy. Specially hand made by the mad mac’s chefs with high quality ingredients, baked to perfection, our madeleines are the authentic heritage of the culinary art created for Louis XIV, king of France.
